Happy Friday! I hope you had a great week! I am so happy it is the weekend! Can you believe that October is almost over? Where has the time gone? It feels like just yesterday I moved to RI! Wow! Next weekend we will be setting the clocks back too! Yeah for extra sleep though! :)

Before we kick off the weekend, I have a savory little recipe to share with you! I made this a few weeks back (yes, it is long overdue!) and posted it on instagram. I promised I would share the recipe, so here it is! Quick, easy and packed with veggies! I hope you enjoy! Have an amazing weekend! :)

Baked Bean Veggie TostadasBaked Bean Veggie Toastadas 4

Fit Ingredients

  • 2 corn tortillas
  • 1/2 c (130g) Eden Organic Baked Beans
  • 1 slice (28g) Colby Jack Cheese (I used TJ’s brand since it is low sodium)
  • 1.5 oz sliced baby bellas
  • 1/4 c spinach
  • 1/4 c onion

  • Baking Sheet
  • Parchment Paper

Directions

1. Preheat your oven to 375 degrees.

2. Line your baking sheet with parchment paper.

3. Saute your onions, mushrooms and spinach in a pan until just cooked through.

4. Top each tortilla with half of the baked beans.

5. Top the baked beans with half of the slice of cheese.

6. Layer veggies on top of cheese.

7. Put tortillas on the baked sheet and bake until cheese is bubbly.

8. Serve! :)

These were an amazing twist on a normal tostada!! The flavor of the baked beans really brought the dish to life! I ate both and they were gone in 2 minutes flat! ?
