Baked Apples With Vanilla Cupcake Oat Crumble

Happy Monday! I hope you had a great weekend! The temperatures here have significantly dropped — I think I can officially say that the winter weather is upon us! That usually means I start craving comfort food (liked baked apples ;)) and stay snuggled up inside baking! Sounds like a win for us all, doesn’t it? ? Here is the first of many cold weather comfort dishes! This one is so easy and healthy you can enjoy it for breakfast! Have a great Monday!

Baked Apples With Vanilla Cupcake Oat Crumble 4

Serves 6 A sweet, vanilla topped treat that is healthy enough for breakfast! Write a review Save RecipePrint Prep Time 10 min Cook Time 30 min Total Time 40 min Prep Time 10 min Cook Time 30 min Total Time 40 min Ingredients

  1. 2 large apples (310g), sliced
  2. 3 tbs (30g) oats
  3. 3 tbs (30g) oat flour (could sub almond meal)
  4. 4 tbs (56g) SweetSpreads Vanilla Cupcake Coconut Butter, melted & divided
  5. 2 tsp ground cinnamon
  6. 1 tsp lemon juice
  7. pinch salt

Instructions

  1. Preheat oven to 350 degrees
  2. Toss together apples, cinnamon, salt, lemon juice and 1tbs melted SweetSpreads
  3. Spread evenly in baking dish
  4. Combine remaining ingredients
  5. Sprinkle over top of apples
  6. Bake in oven for ~30 minutes or until apples begin to bubble
  7. Serve warm or hot
