Apricot Walnut Protein Bars

Happy Sunday! I hope you are having a great weekend! You’re shocked you are seeing a recipe today, aren’t you?! ? Well, it’s the 21st of the month and you know what that means….RECIPE REDUX time! For those of you who aren’t familiar with this group, it is the first and only recipe challenge founded by registered dietitians. The Recipe ReDux is focused on taking delicious dishes, keeping them delicious, but making them better for you. It was founded by 3 amazing dietitians with a belief that healthier eating should always taste delicious. And let me tell you, I totally agree! This month’s challenge was to share some of our favorite travel snacks! Since it is the summer time and many of us are going away on vacation with family and friends we are in need of healthy and delicious snacks! I knew right away that I would be making some kind of bar! Of course, I got a little carried away and made a few different kinds! haha So, you will be seeing a few others in the next couple weeks! I love bars because they are quick, can be customized to any flavor you like, can be made with any healthy ingredient and pack super easily in a ziplock to grab for on the go travel! Fit Ingredients
- 1 1/2 c (120g) oats
- 2tbs (30g) ground flax
- 1 scoop (30g) vanilla whey protein powder
- 1/4 c (28g) chopped walnuts
- 100g (about 15 pieces) dried apricots, soaked in water for 3-4 hours
- sweetener, optional (I used a few drops of vanilla creme stevia)

Directions
1. Pre heat your oven to 350 degrees.
2. Drain the soaking water from your apricots and puree them in the food processor.
3. Add remaining ingredients to the apricots and give a quick mix in the food processor until just mixed (or you can add all ingredients to a bowl and hand mix).
4. Even spread the mixture into a baking dish lined with parchment paper.
5. Bake for ~ 10 minutes or until just set (don’t over bake or they will dry out)
6. Slice into individual bars for a quick on the go snack!
Apricots are one of my favorite fruits! They give these bars and amazing sweetness! These were awesome for me to through in my bag to each after my workout or on the way to yoga!
