Apple Pie Ice Cream Cups
Happy Wednesday! I hope that you had a great long weekend! Now that Memorial Day has passed, I think we can officially say it is ice cream time! Well, actually, when is it NOT ice cream time! ? Either way, these delicious and easy Apple Pie Ice Cream Cups are a great way to kick off the summer season! I hope you enjoy! Have a great day!

- BASE
- 1/3c + 2.5tbs (60g) oat flour
- 1/2 cup (40g) oats
- 1 scoop (40g) Nuts N More Almond Infused Whey
- 1/2 tsp ground cinnamon
- 1/4 cup (64g) Nuts N More Almond Butter
- 2 tbs (42g) honey
- 1-2tbs water
- Ice cream, of choice (I used Arctic Zero Vanilla Maple)
- 1/2 apple, diced
- 1/2 tsp apple pie spice
- sweetener, if desired
Instructions
- Combine all of the ingredients for your base except the water
- Add the water in SLOWLY until a mold-able batter form (you don’t want it wet or sticky)
- Take 4 silicone muffin cups and mold batter into the inside (you could also use a muffin tin upside down. Just coat with non stick spray and mold)
- Place muffin cups in freezer for 20 minutes
- Coat a skillet with nonstick spray and put over medium heat
- Saute apples and sweetener
- Sprinkle in apple pie spice
- Saute until desired doneness
- Gently remove the muffin cups from the molded bater
- Place 2 tbs ice cream in each cup
- Top with warmed apples
