This whole30 compliant Apple, Bacon & Onion Frittata is so delicious you won’t even miss the cheese! Loaded with all the goodness of fall, it has so much flavor you wouldn’t believe it is healthy! It is perfect for brunch, breakfast, lunch or even dinner! The Apple, Bacon & Onion Frittata works well for meal prep too! Oh, and a little maple syrup on top for my non-whole30 friends is quite epic! Just saying!

Yes, I am back with more egg recipes! Are you sick of them yet? If you read last week’s post then you have seen all my favorite ways to use eggs and egg whites! I know my obsession with breakfast is a little crazy, but it is my favorite meal of the day and I can actually take pictures in daylight! (The nighttime photos can be scary! haha) Plus, this Apple, Bacon & Onion Frittata is perfect for any meal! I ended up eating it for a quick lunch most days with a big salad! It was easy, flavorful and kept me full!

So, I was doing a little mealprep last weekend (yes, even though I work from home, I still meal prep! I need to be able to grab something quick!) and had an apple and some bacon that needed to be used up. Since I love eggs (for all meals of the day!) I decided to make this quick frittata while I was working on some other dishes (Meatloaf and crockpot tri-tip…..swoon!) I left out the cheese since I am doing my second round of Whole30 and to be honest, despite cheese being like my second favorite food on the planet (after eggs) I didn’t even miss it! The sweet apples combined with the salty bacon and the savory onion just took over! It was sooo good I ended up eating it for breakfast and lunch the next day!

This whole30 compliant frittata is so delicious you won’t even miss the cheese! Loaded with bacon, onion and sweet apples, it has so much flavor you wouldn’t believe it is healthy! This is perfect for brunch, breakfast, lunch or even dinner! It also works well for meal prep too!

Ingredients

Instructions

  1. Preheat oven to 350 degrees F
  2. Heat avocado oil in a medium oven safe skillet. Add in onion and cook for 2 minutes. Add in apple and bacon bits and cook for an additional 2 minutes.
  3. In a bowl, combine eggs, egg whites, flour, salt & pepper. Mix well.
  4. Add egg mixture to sauteed onion, apple and bacon bits.
  5. Place skillet in oven and bake until golden. About 35 minutes.
  6. Eat warm or cold.

* can sub regular crumbled bacon instead

This recipe reheats very easily too! To be honest, I really enjoy eating this cold but if you aren’t down with the cold egg idea then feel free to reheat it for a quick and warm weekday breakfast!
