Purple Sweet Potato & Chorizo Frittata

Sometimes the best meals are the ones where you toss it in a skillet and let it do it’s thing! This was one simple and flavorful dish that was too good not to share! I used leftover spiralized veggies, but feel free to use whatever you have on hand!

  • ¼ cup spiralized purple sweet potatoes*
  • ¼ cup spiralized zucchini*
  • 1 oz chorizo, diced
  • 3 large eggs
  • 1 tsp tallow

Instructions

  1. Preheat oven to 400 degrees
  2. Add tallow to cast iron skillet
  3. Saute sweet potato for 2 minutes
  4. Add in zucchini and saute an additional 1 minute
  5. Add chorizo to skillet
  6. Whisk eggs and add to skillet
  7. Allow to cook for 2 minutes or until edges begin to firm
  8. Place in oven and bake for ~15 minutes or until edges are golden and middle is set
