Paleo Meal Prep: January 11, 2016

Ingredients:

1 lb chicken breast

1 bag brussels sprouts

1 package steam fresh beets

2 apples

coconut oil

Method: 

  1. Preheat oven to 350 degrees
  2. Line a baking sheet with foil
  3. Slice brussels spouts in half and toss with coconut oil
  4. Place chicken breast and brussels on baking sheet
  5. Cook for ~18-20 minutes
  6. While chicken is cooking, slice apples and beets
  7. Evenly divide all food between 3-5 containers

1/2 lb shrimp + mixed veggies

fajita steak + peppers + avocado

4 bags macadamia nuts + dried cranberries

breakfast muffins

large mixed greens salad

100 oz water
