Ok, so I admit. I have never been much of a buffalo chicken fan. Mostly, because I don’t like spicy foods! But, when I discovered a mild buffalo sauce a few months back…you better believe I started playing with that buffalo sauce! Buffalo salmon? Happened here. Might sound weird, but it was soo good! I also made lots of plain buffalo chicken salads with a bit of mayo, buffalo sauce, and chicken along the way too. So yum!
But something more traditional had to happen. Something like this Whole30 Baked Buffalo Chicken Casserole. So many heart eyes for this dish!
Not only is this very easy to make, but it is healthy and makes a huge batch making it perfect for meal prep! Whole30 Baked Buffalo Chicken Casserole is also paleo, gluten free, low carb, high protein and dairy free! It might sound like it doesn’t have any flavor, but the flavors are mind blowing! (So mind blowing that I finished the pan in 2 days!)
Whole30 Baked Buffalo Chicken Casserole has all the flavors of a traditional buffalo chicken recipe. I finished the casserole off with the ranch dressing on top (and extra buffalo sauce), but you could easily mix some right into the dish too! And for those who aren’t following Whole30 you could finish this off with a bit of blue cheese! #AlwaysRoomForCheese

Ingredients
- 1 lb. chicken breast, cooked & shredded
- 3 3/4 cup cauliflower, riced (about 425g)
- 1 small onion, diced
- 1/2 cup carrot, diced
- 1/2 cup celery, diced
- 1/2 clove garlic, minced
- 1 tbs ghee
- 1/4 tsp. black pepper
- 1/2-3/4 cup buffalo sauce
- 1/2 cup egg whites
- ranch dressing , as desired
- chives, as desired
Instructions
- Preheat oven to 400 degrees
- Line a baking pan with parchment paper
- Add ghee, onion, carrots, celery and garlic to a skillet and saute until onion is translucent and softened
- Add cauliflower rice, shredded chicken, sauteed veggies, egg whites and buffalo sauce to a bowl
- Mix well
- Pour into lined baking pan
- Bake covered for 25 minutes
- Remove cover and bake an additional 20-25 minutes or until set
- Top with ranch and chives, if desired
