What I Ate Wednesday #40 – Cleaning Out the Refrigerator
Happy Wednesday! I hope you have been able to find some happiness in your week so far! To be honest, since the Boston tragedy on Monday afternoon I have been in a big funk! Being not only a marathoner, but also a Bostonian, this really hit home for me and I haven’t been able to shake it. Yesterday, other than a few tweets in the morning about the recipe of the day, I took the day off from social media and gave myself time to think and just ‘be’. I skipped my yoga class in the morning and did a 6 mile run in honor of the marathoners and then did a yoga DVD at home. The silence and peacefulness was very needed.
Even as I am writing this (Tuesday night) I am having a hard time putting down what I would like to say since I have a million things going through my head. One thing I will say is that we have an AMAZING community of people in the blog world! The support, concern and acts of kindness I have seen and read about are amazing! I feel lucky to be surrounded by so many wonderful people!
Now that I have started your day off on a sad note, let’s make it happy again with some delicious meals and some exciting news! My meals are looking a bit weird the last few days because I have decided that I need to stop buying food when I already have soooo much in the house! So, I have been slowly working my way through every last fresh and frozen vegetable, fruit and package of meat so I can start fresh next week! It looks like tomorrow I am going to need to start tackling the cabinets and closets because the fridge and freezer are starting to look a little desolate!
Meal #1
Ok, so I know this looks like a big bowl of bland white mush, but let me assure you that it was AMAZING!!! oat bran, egg whites, riced cauliflower, vega parm cheese and black pepper all mixed together and topped with hemp seeds! It was AMAZING! Seriously!
Meal #2
Fridge and freezer dump salad! Butter lettuce, carrots, avocado, diced pear, frozen mixed berries, cauliflower and no salt cottage cheese mixed with braggs seasoning and coconut vinegar!
Meal #3
I was going to make my goat cheese and turkey meatballs, but I was too hungry to wait to cook them, so I took all the ingredients and mixed them into my spaghetti squash and topped it with cranberries. Then I had a bowl of natures best candy on the side….brussels sprouts!
Meal #4
A big bowl full of green!! Sauteed kale, portobello mushrooms, brussels sprouts and steamed broccoli topped with kelp noodles, baked cod fish and lots of seasonings!
(Yes, I do eat most of my meals out of this big plastic bowl! I like it! )
Meal #5
Nightly dessert….still on the chocolate PB casein kick!
