Turkey, Cranberry & Goat Cheese Quesadilla
Serves: 1
Happy Monday!! I hope you had a great weekend! The weather was a bit cloudy here and I have been feeling slightly under the weather, but it was still a nice weekend! Not feeling so great forced me to just relax, watch a few movies and catch up on some much needed sleep! Can’t complain about that, right?
Today’s recipe is one that I shared on Instagram a few weeks back! The demand for the recipe was so high, I figured I would make an official post! So, pardon the pictures, but they are of my actual meal right before I dive into it! I have made this quesadilla about 6-7 more times (including yesterday) since the first time I shared it! It is soooo delicious with the sweet and savory flavors! It really hits the spot! I hope you enjoy it! Have a great Monday!
Fit Ingredients
- 1 tortilla (I used Trader Joe’s Brown Rice Tortilla)
- 1 oz goat cheese
- 2 oz no salt turkey breast (I used Boars Head brand)
- 1/2 c (65g) fresh or frozen cranberries
- Braggs 21 Herb Seasoning, to taste
Directions
1. Spread your goat cheese over half of your tortilla.
2. Sprinkle with seasoning.
3. Lay your turkey on top of goat cheese.
4. Top with cranberries.
5. Fold your tortilla in half.
6. Heat a non stick skillet over medium heat.
7. Place your tortilla in the pan and cook until golden and cheese begins to melt.
8. Flip and cook until golden.
9. Slice and eat!
The sweet and savory combination of this quesadilla is AMAZING! Plus it has all of the yummy flavors of fall and thanksgiving wrapped up in just a single bite! If you’ve been following me for more than a year, you KNOW my love of all things thanksgiving flavored!
