Sweet Potato Pecan Crumble Bars
Happy Friday! I hope you had a great week! Can you believe Thanksgiving is next Thursday? I am blown away! So, I thought I would start sharing some yummy and healthy recipes that would be the perfect addition to your holiday spread! These bars are not only tasty, but also quick and easy! I hope you enjoy! - BASED/TOP
- 140g (1 cup + 2tbs) FlapJack Buttermilk Pancake Mix (or oat flour)
- 1/4 cup dry sweetener of choice (I used Xylitol)
- 1/4 cup coconut oil, melted
- pinch salt
- MIDDLE
- 1/4 cup Chobani plain greek yogurt
- 1/2 cup mashed sweet potato
- 1 large egg
- 1 tsp pure vanilla extract
- 2 tbs coconut flour
- 2 tsp ground cinnamon
- 1/4 cup sweetener of choice
- 2 tbs crushed pecans
Instructions
- Pre heat oven to 350 degrees
- Mix together base ingredients
- Press 3/4 mixture into the bottom of parchment line baking pan (5x7in)
- Add all middle ingredients of a blender (or hand mix very well)
- Spread mixture evenly over base
- Crumble remaining base on top of sweet potato mixture
- Sprinkle with pecans
- Bake for ~40 minutes
