Sweet Potato Blondie Bars
Happy Monday! I hope you had a great holiday weekend!! For all of you who still have some left over sweet potatoes lying around (I know I always have plenty on hand), this recipe will be perfect! Not only is it quick and easy, but it is very tasty!! I hope you have a great last few days of 2014!!!

- 1 cup oat flour
- 1/2 cup coconut sugar (can sub brown sugar)
- 1 tsp baking powder
- pinch salt
- 2 eggs
- 6 tbs (72g) Sweet Spreads Cinnamon Roll CocoNutter, melted
- 1 cup pureed sweet potato
Instructions
- Pre heat oven to 350 degrees
- Spray baking pan with non stick spray
- Whisk together dry ingredients
- Mix together wet ingredients
- Combine wet and dry ingredients
- Pour batter into the pan
- Bake for ~22 minutes
