Happy Friday! I hope you had a great week! I don’t know about you, but I am very happy it is Friday! For some reason this week has felt extra long! Maybe because I am excited for the upcoming holiday next week? Hopefully some of you are starting a long holiday vacation today too! The fourth of July always signifies the official start of summer for me, so I thought it would be a great day to share this recipe! Strawberries and limes are two wonderful summer flavors, but put them together and they are even better! I hope you enjoy this recipe and have an amazing weekend! :)

Fit Ingredients

  • 1/4 c + 2tbs (42g) almond flour
  • 2 tbs (14g) coconut flour
  • 2 tsp (10g) psyllium husk (or flax)
  • 1/2 tsp baking powder
  • 1/4 c baking stevia
  • 1 large egg
  • 2 egg whites
  • 1/4 c milk
  • 1 tsp pure vanilla extract
  • 3/4 c (105g) fresh strawberries, chopped
  • zest of 1 lime
  • juice of 1/2 lime

Frosting

  • 2 tbs (28g) non fat greek yogurt
  • vanilla stevia, to taste (or vanilla extract with desired sweetener)

  • muffin tin
  • non stick spray

Directions

1. Pre heat your oven to 350 degrees.

2. In a bowl combine your dry ingredients: almond flour, coconut flour, psyllium, baking powder and stevia.

3. In a second bowl mix together your egg, egg whites, milk, lime zest, lime juice and vanilla.

4.Combine your wet and dry ingredients.

5. Fold in your strawberries.

6. Spray your muffin tin with non stick spray. Divide the batter evenly between 5 muffin cups.

7. Bake for ~30 minutes.

8. Once cooled, mix togther your yogurt and stevia.

9. Swirl on top by putting yogurt in a plastic ziplock and snipping off the end.

OH MY GOODNESS!!! These are perfect in a muffin! As soon as they came out of the oven I could smell how delicious they were going to taste! I could barely wait to eat them! You are lucky I restrained myself long enough to take some pictures! These are a home run! I ate them all in 2 days…….maybe ? I couldn’t help myself! They were the perfect dessert!
