Spiced Peach & Cranberry Chutney

Happy Monday! I hope you had a great weekend! Mine was an absolute blast! Saturday I went up to my mom’s to visit and had an amazing day! My mom, her boyfriend and I went apple picking, then did a little clothes shopping and THEN hit up the most amazing grocery store I have ever been too! Wegmans? Has anyone heard of this place?! It was like the Mall Of America in food!!! Holy COW!!! I was like a kid in a candy shop! I picked up lots of goodies that I will be sharing with you soon! God bless my mom’s boyfriend for not complaining one time about the 45 minute TJMaxx stop or the 90 minute Wegman’s trip!

Sunday I spent the day in the kitchen whipping up lots of yummy recipes for you! Get ready!! :) Before we jump into today’s recipe I just wanted to share a couple pictures from our apple picking adventures! Have to give a little shout out to my mom! She’s crazy….and I love her tons!

Now, onto the recipe! This is so quick and easy…and tastes delicious! I hope you enjoy this combination of both summer and fall flavors! Have a great Monday!

Spiced Peach & Cranberry Chutneyno image

Fit Ingredients

  • 2 medium peaches (250g), diced small
  • 2 1/2 tbs (20g) dried cranberries (no sugar added)
  • 1 tbs (6g) chia seeds
  • 1/4 tsp ground cinnamon (adjust to desired taste)
  • Sweetener, optional

Directions

1. Place your diced peaches in a microwave safe bowl.

2. Microwave for 1 minute. Then remove and give them a good mix.

3. Return to the microwave for an additional 1-2 minutes, stirring every minute, until they become nice and juicy!

4. Mix in your chia seeds, cranberries and cinnamon.

5. Cover with plastic wrap and refrigerate for 2-4 hours or until nice and thick.

6. Slather all over a bagel, english muffin or even some chicken!!

You all know my love of sweet and savory and this brings sweet to a whole new level! I put it over chicken and also on a sandwich with goat cheese! It was OUT OF THIS WORLD!!!
