Pumpkin Spice Donuts

Happy Friday! I hope you had a great week! Today I am up in Boston for a company meeting, which means I was up at 4:30am to make sure I got my workout in then off to the train by 7am! It is definitely going to make for a long day, but I am looking forward to a great weekend off! The weather is supposed to be beautiful and I am a big urge to bake!! That means many more delicious treats to come!
I thought these delicious fall donuts would make the perfect end to a long week! Every bite reminds of fall! I hope you enjoy them! Isn’t it nice to be able to enjoy a donut and still be eating healthy?! Have a great weekend!
Fit Ingredients
- 1/4 c + 2tbs (42g) almond flour
- 2 tbs (14g) coconut flour
- 1/2 tsp baking powder
- 1 tbs pumpkin pie spice
- 1 large egg
- 2 large egg whites
- 1 1/2 tsp pure vanilla extract
- 1/4 c (61g) pumpkin (not pie filling)
- Stevia, to taste

- Donut pan
- Non stick spray

Directions
1. Pre heat your oven to 350 degrees.
2. Mix together your dry ingredients: almond flour, coconut flour, baking powder and pie spice.
3. In a separate bowl mix together your wet ingredients: egg, egg whites, vanilla, pumpkin and sweetener.
4. Combine your wet and dry ingredients.
5. Spray 4 donut molds with non stick spray.
6. Evenly divide the batter among the 4 molds.
7. Bake for ~ 18 minutes or until they spring back.
8. Coat in additional sugar, if desired.
Two of my favorite fall desserts are pumpkin donuts and apple cider donuts, both covered in massive amounts of sugar!!! They are a tradition when we head to the apple orchard every fall! These donuts satisfied that craving PLUS are healthy….that I may have even had more than two one at a time ?
