Peanut Butter & White Chocolate Krispie Squares

The weather over here on the east coast has been nothing short of hot, humid, rainy and just plain gross! I never thought the air conditioning would get so much use this time of year! I sure hope it doesn’t stay like this all summer! Despite the warm weather though, my desire to keep cooking & baking doesn’t change! Yet there are some days when I just don’t want to turn on the oven and this was one of those days! These bars are quick, easy and require no cooking! And the best part is…they will send you straight back to your childhood! :)

Fit Ingredients

  • 1 c peanut butter (preferably all natural)
  • 10 oz white chocolate chips (I used Ghiradelli all natural)
  • 4 c whole wheat krispie cereal (I used Trader Joe’s)

  • 9×11 inch pan*
  • parchment paper

Directions

Line your pan with the parchment paper. In a microwave safe bowl, add your peanut butter and white chocolate chips. Microwave your peanut butter and white chocolate on high for 30 seconds and then stir. Continue to microwave in 30 second increments until melted. Make sure to stir it after every 30 seconds. *White chocolate can easily burn so don’t just throw it in the microwave for 5 minutes!! When it is fully melted remove the bowl from the microwave and gently stir in your whole wheat krispie cereal. Stir it until all the cereal is coated. Once it is all coated, pour the cereal into your lined pan and spread evenly. I like to use an additional piece of parchment paper to spread it since it is sticky. After it is even spread, press down on the top to make sure it is stuck together nice and tight. Refrigerate for 2-3 hours and then cut into 15 squares.

These squares are perfect for both the kids and adults at your memorial day bbq! Enjoy and have a happy & healthy holiday! :)

*You could also use a larger pan and make the squares thinner to make more servings and reduce the calorie count! I like them to be thick squares like they were when I was a kid, so I made them bigger. Don’t forget to eat in moderation! We shouldn’t be sitting down and eating half the plate! ?
