PB Kabocha Spread

I want to thank you all for the birthday wishes on Friday (and those I received on Twitter yesterday)! The birthday excitement this weekend was low key, but very fun! I will give you a full update…with the food pics for this week’s WIAW! So stay tuned! Until then, you will have to enjoy this amazing recipe made with my favorite food….KABOCHA! This is probably one of the most simple recipes on the site! Not only is it easy, but it is soooo delicious! Then again, anything made with kabocha squash and /or peanut flour is amazing! Fit Ingredients
- 1 c (200g) mashed kabocha flesh (cooked)
- 1/4 c + 2tbs (45g) peanut flour
- vanilla stevia, to taste (or sweetener of choice)
- 1-2 tbs water or milk, if needed
Directions
1. Mix it all up in a bowl and SPREAD baby, SPREAD!!! ?
The consistency will be just like hummus…maybe I should have named it PB Kabocha hummus?! haha And let me tell you…..there aren’t even words to express how amazing this is!! I spread it on toast, rice cakes and then just ate the rest straight out of the bowl! How could you not for these nutrition stats!! ? I may or may not have eaten the entire bowl in one day…just saying
