They would make a great addition to your Sunday brunch! Or perfect to pack for a quick snack or grab for an on the go breakfast during the busy week!

- 1/4 cup (60g) fresh fig meat or fig puree
- 3 large eggs
- 2 tbs (28g) coconut oil
- 2 tbs (28g) Sweet Spreads Cinnamon Roll CocoNutter
- 1/2 tsp pure vanilla extract
- 1/4 cup (28g) coconut flour
- 1/2 tsp baking powder
- 1 tsp vietnamese cinnamon
- pinch salt, optional
Instructions
- Pre heat oven to 350 degrees
- Line 6 muffin cups with paper liners or spray with non stick spray/coconut oil
- Melt your coconut oil and butter together in a bowl
- Mix in your fig meat and vanilla extract
- Whisk in your eggs
- Sift your dry ingredients to your wet
- Mix until just combined
- Evenly divide batter among muffin cups
- Bake for ~30 minutes or until set
