Orange Creme Protein Bars

Happy Monday! I hope you had a great weekend! We ended up having TWO days full of gorgeous weather! It was so nice to feel the warmth of the sun! Saturday the boyfriend surprised me by taking me into NYC to do a little bit of shopping on Fifth Ave and Union Square. Of course, I ended up spending most of my time (and money) in LuLu Lemon! That store carries everything! But better than the shopping was the time spent together outside in the sun, taking in the disgusting beautiful NYC air ? Our trip was capped off with a 2.5 hour commute back home (note: I live 15 minutes away) — Gotta love NYC traffic! haha It may sound like I am complaining, but it really was an amazing day! :)

Last week I mentioned that I had made a few protein bar recipes. Well today I am sharing another one with you! These bars are very simple and require no baking! I wish I had a few of these in the car ride home yesterday since I failed (big time) to pack us any snacks or drinks…..You can only imagine how hungry I was when I got home! I hope you enjoy them!

Fit Ingredients

  • 3/4c (60g) rolled oats (not instant)
  • 1.5 scoops (45g) vanilla protein powder
  • 3 tbs (48g) almond butter
  • 1/4c (84g) honey/agave/coconut sugar
  • 1 bag (28g) Trader Joe’s Crispy Jeju Mandarin Orange Slices (or any freeze dried oranges), crushed
  • 1/4 tsp orange extract

Directions

1. Mix together your oats, protein powder and crushed oranges.

2. In a second bowl whisk together your almond butter, sweetener and orange extract.

3. Roll up your sleeves and mix together your wet and dry ingredients. :)

4. Use those muscles to mix and mix until fully combined.

5. Spread mixture into a baking dish.

6. Freeze for 1 hour.

7. Slice and wrap into individual bars.

8. Store in the freezer or refrigerator until ready to eat!

The vanilla protein powder and sweet orange pieces remind me of an orange creme ice cream pop I would eat as a kid (especially when I eat it straight from the freezer!)! These bars are sweet and make the perfect snack to eat before a workout or when you are on the go! :)
