It may not be very cold here in Arizona yet, but all of my cravings for fall treats and comfort foods have kicked in! And when you can create something like Maple Peanut Butter French Toast Cups to satisfy both your fall sweet and comfort food cravings it’s a double win! And that is exactly how these came about! I mean, can you think of a better way to relax on a Sunday morning than in your pj’s all nice and comfy enjoying these sweet little Maple Peanut Butter French Toast Cups? I know I can’t!
The Maple Peanut Butter French Toast Cups are a great alternative to standing over the oven making french toast piece by piece! They are also much quicker than your normal baked french toast! Plus, single serve? Who doesn’t love treats that are made for one? I know it makes me feel more special!
I used egg whites i nstead of whole eggs to amp up the protein and then filled it with my favorite maple peanut powder to give it that decadent, melty peanut butter center! Of course, I had to use the maple flavor because a) it’s my favorite and b) maple is such a great fall flavor!
Ok, I know you are drooling and ready to just go make these already!
Maple Peanut Butter Stuffed French Toast Cups Print Author: Sarah Recipe type: Breakfast Serves: 6 Ingredients
- 1 cup milk
- ½ cup vanilla egg whites
- 1 large egg
- 1 tsp vanilla extract
- sweetener, to taste
- 2 tsp ground cinnamon
- 8 slices bread
- ½ cup maple peanut butter powder
- 4-6 tbs milk or water
Instructions
- Preheat oven to 400 degrees
- Coat 6 muffin cups with nonstick spray
- Whisk together all ingredients through cinnamon
- Cut bread into squares
- Soak bread in egg mixture
- Place bread cubes into muffin cups
- Bake about 18-22 minutes
- While French toast is baking
- Combine maple peanut powder with 4-6 tables of milk or water (you are looking for a peanut butter-like consistency)
- When French toast cups are done, top each with the maple peanut powder
- Enjoy with maple syrup
