Lemon Coconut Cookies

Happy Monday! I hope you had a great weekend! We had some beautiful weather in NJ! I mean just gorgeous! So, of course, that meant getting outside and taking advantage of it! I went to the park, put my headphones on and took a nice leisurely walk…..just the sun and some relaxing music! It couldn’t have been more peaceful! I wish every day was like that!
But now that we are back on a rainy Monday, let’s enjoy this cookie recipe and hopefully that will bring some sunlight to our day! These delicious treats are very simple to put together and taste amazing! Maybe that bright lemon flavor will help bring some light to your day! I hope you enjoy!
Fit Ingredients
- 1/2 c (56g) almond flour
- 1 /2 tbs (7g) coconut oil
- 3 tbs (46g) liquid egg whites
- lemon stevia, to taste
- 2 tsp (3g) reduced fat shredded coconut

- parchment paper
- baking sheet

Directions
1. Pre heat your oven to 325 degrees.
2. In a bowl mix together your almond flour, coconut oil, egg whites and lemon stevia.
3. Shape your dough into desired cookie shape on parchment paper.
4. Sprinkle coconut on top.
5. Bake for ~ 10 minutes.
6. Eat
Delicious! These cookies are light, soft and full of lemon and coconut flavor! Perfect little treat for a hot afternoon!
