Just For Fun Vanilla Cupcakes
So, I will admit that I am not much of a sweets person anymore…like cupcakes, cakes, donuts, etc. But as you can probably tell, every once in awhile I get into a groove when I make a recipe….and I just get these cravings! So, after whipping up these tasty cupcakes, I was craving them again! But a bit more simple this time! The thing I love most about this recipe is that it makes only 2 cupcakes, which is just the right amount! Plus, it’s a great excuse to celebrate National Cupcake Day!
Just For Fun Vanilla Cupcakes Prep time 10 mins Cook time 15 mins Total time 25 mins Author: Sarah Recipe type: Dessert Serves: 2 cupcakes Ingredients
- **CUPCAKES**
- 6 tbs (42g) almond flour
- 1 tsp baking powder
- 2 tbs ground flax
- ¼ cup vanilla eggwhites
- 1 tsp vanilla extract
- 1-2 tsp stevia (liquid) or sweetener of choice
- **TOP**
- 2 tbs frosting
Instructions
- Pre heat oven to 350 degrees
- Line 2 cupcake molds with cupcake liners
- Combine dry cupcake ingredients
- Mix wet ingredients into dry ingredients
- Divide batter evenly among 2 molds/cupcake liners
- Bake for about 15 minutes (cupcakes will seem a bit soft but they will continue to set as they cool)
- Allow to cool
- Once cooled, frost as desired
