Honey Pecan Banana Upside Down Oatmeal
Happy Monday! I hope you had a great weekend! Mine was very busy! My sister is moving back to AZ, so I spent a good portion of the weekend helping her pack! Man, I forgot how tiring that can be! I also forget that it was daylight savings time, so I woke up slightly confused on Sunday! haha Woops!
It’s ok though because today I have an absolutely delicious breakfast recipe that is super healthy and out of this world in flavor!! It makes up for all the weekend chaos! Baked oatmeal is one of my favorite things because I can toss it in the oven while I am showering and getting ready for the day and have a warm and tasty breakfast ready for me as soon as I am done! But when I can make that baked oatmeal taste like dessert with a bit of Honey Pecan Coconut Butter from Essentially Coconut…..WOW! Breakfast is taken to a whole new level! Top it with a dollop of greek yogurt and it is the perfect fuel to kick off your day! I hope you enjoy!

- 1/2 cup oats
- 1/2 tsp baking powder
- pinch salt
- cinnamon, to taste
- 1 small banana
- 1/2-1 tbs Essentially Coconut Honey Pecan Butter
- 1/3 cup milk
- 1/2 tsp pure vanilla extract
- Honey + pecans for topping, optional
Instructions
- Preheat oven to 350 degrees
- Spray a 4 inch ramekin with non stick spray
- Crumble pecan butter onto bottom of dish
- slice enough banana to cover bottom
- Mash remaining banana
- Add milk, vanilla cinnamon, oats, salt and baking powder
- Mix well
- Pour on top of sliced banana
- Bake for ~40 minutes or until set
- Allow to cool
- Top with additional honey and pecans, if desired
