Homemade White Chocolate Peanut Butter Easter Eggs

It’s almost Easter, which means the candy is everywhere!! Hands down, my favorite Easter candy has to be Reese’s Peanut Butter Eggs. So, this year, instead of buying a whole bunch

I decided to make my own healthy version that is almost sugar free, made with healthy fats and has 10g of protein! Plus, it’s a fraction of the cost!

Serves: 8 eggs

Ingredients

  • ¼ cup high protein peanut butter
  • 2 tbs marshmallow creme
  • 1 cup powdered peanut butter
  • 3 tbs coconut oil, softened
  • ⅛ tsp liquid stevia*
  • 5 ounces sugar free white chocolate
  • Decorations, as desired

Instructions

  1. Beat peanut butter, coconut oil, marshmallow and stevia until creamy
  2. Add in powdered peanut butter ¼ cup at a time
  3. Roll dough into 8 equal sized egg shapes
  4. Place in the refrigerator for 30 minutes
  5. Line a baking sheet with parchment paper
  6. Melt White chocolate
  7. Dip each egg into white chocolate (tapping off ecxess chocolate)
  8. Place on baking sheet
  9. Decorate, if desired
  10. Place in the refrigerator to set for 20 minutes
