Golden Berry & Pepitas Bars

Happy Friday! I hope you have had a great week! On Monday I mentioned having lost my voice on Sunday. My beautiful friend Jody told me to make sure to get lots of rest because for her that usually meant a cold was coming. Well, she couldn’t have been more right! By Tuesday morning I felt like a truck ran over me I thought maybe some yoga would do me good, but let’s just say it ended up being a very painful 75 minutes! Needless to say, I have spent the rest of the week nursing this cold, which is why I have been M.I.A the last few days (well at least on IG and Twitter). I haven’t had a cold since March of 2012, so I guess it was my turn to get one! You can bet that this weekend will be filled with lots of rest, movie watching and hot tea! Make sure to get outside for me and enjoy some sunshine and exercise!
But before I bring myself back to my bed with a big box of tissues, I want to share this delicious recipe with you! I hope you enjoy!
Fit Ingredients
- 3/4 c (105g) all purpose baking flour (I used this one)
- 1 tsp baking powder
- 1/4 tsp ground ginger
- 1 large egg
- 1/4 c (56g) greek yogurt
- 1/4 c (61g) apple sauce
- 1/2 c milk of choice
- 1/2 tsp liquid stevia (adjust to desired sweetness)
- 1/2 tsp orange extract
- 1 tbs orange zest
- 1/2 c (60g) golden berries, rehydrated
- 1 tbs (8g) pepitas (pumpkin seeds)

- non stick spray
- 2 mini loaf pans

Directions
1. Pre heat your oven to 350 degrees.
2. In a bowl combine your wet ingredients: egg, yogurt, applesauce, milk, stevia and orange extract.
3. Mix in your flour, baking powder and ginger.
4. Fold in your golden berries.
5. Divide batter evenly between 2 pans.
6. Sprinkle with pepitas.
7. Bake for ~ 30 minutes or until slightly golden.
8. Slice on the diagonal.

These bars are loaded with sweet flavor!!! Orange, golden berries and the crunch from the pepitas….delicious! These are much healthier and tastier than any pre made energy bar! I ate mine before my yoga class and it was the perfect amount of food to power me through! Plus, we all know how I love those grab and go snacks!
