Dark Chocolate Coconut Mango Truffles
TGIF Friends! Who is happy it is Friday?! I have a very quick and easy recipe for you today! This sweet treat is not only healthy, but will satisfy your chocolate craving in no time! It would make the perfect dessert to enjoy for the upcoming Easter holiday! Plus, mango is just one of those fruit flavors that sends you straight to a (warm) tropical island! I know most of us would like to be on one of those right now! haha

- 3/4 cup (168g) Essentially Coconut Butter
- 1 cup frozen mango, chopped
- 2 tbs coconut flour
- 1/2 cup Amberlyn Sugar Free Dark Chocolate
- pinch salt
Instructions
- Add your coconut butter and frozen mango to a bowl and microwave in 1 minute increments until melted and thawed
- Toss into a high speed blender
- Blend until fully combined
- Hand mix in 2 tbs coconut flour
- Transfer to freezer and allow to set for 30 minutes or until able to roll into balls
- Form mixture into 24 truffles
- Put back in freezer
- Melt your dark chocolate\
- Roll each truffle in dark chocolate
- Put back into freezer for 20 minutes to set
- Store in a sealed container in the refrigerator
