Chewy White Chocolate Cranberry Coconut Bars
Chewy, yet perfectly sweet. These simple, no bake bars are a healthy and easy recipe to enjoy this holiday season!

- 2 cups (160g) rolled oats
- ¼ cup shredded coconut
- ⅔ cup dried cranberries
- 2 tbs pecans
- 3 tbs coconut oil
- 6 tbs honey
- pinch salt
- White chocolate, optional
Instructions
- Add rolled oats, cranberries and pecans to food processor and grind until broken down
- Mix in shredded coconut and salt
- Add honey and coconut oil to a bowl
- Microwave ~30 seconds
- Combine honey/coconut oil and other ingredients
- Mix
- Press into a pan (I used 3 small loaf pans)
- Refrigerator 2-3 hours
- Cut as desired
- Drizzle with melted white chocolate, if desired
- Store in a sealed container
