Chewy White Chocolate Cranberry Coconut Bars

Chewy, yet perfectly sweet. These simple, no bake bars are a healthy and easy recipe to enjoy this holiday season!

  • 2 cups (160g) rolled oats
  • ¼ cup shredded coconut
  • ⅔ cup dried cranberries
  • 2 tbs pecans
  • 3 tbs coconut oil
  • 6 tbs honey
  • pinch salt
  • White chocolate, optional

Instructions

  1. Add rolled oats, cranberries and pecans to food processor and grind until broken down
  2. Mix in shredded coconut and salt
  3. Add honey and coconut oil to a bowl
  4. Microwave ~30 seconds
  5. Combine honey/coconut oil and other ingredients
  6. Mix
  7. Press into a pan (I used 3 small loaf pans)
  8. Refrigerator 2-3 hours
  9. Cut as desired
  10. Drizzle with melted white chocolate, if desired
  11. Store in a sealed container
