Cocoa Banana Berry Flax Bread

Happy Monday! I hope you had a great weekend (or long holiday weekend for many of you!) We were hitting 90+ on Cape Cod the last few days, which is just crazy! Throw some humidity into the mix and all I could think about was getting to the beach for a swim! But since I am traveling back to NJ today, I will give you a full recap of my eats and some great pictures this Wednesday for WIAW! So, until then I will leave you with this delicious recipe! I hope you enjoy it and have an amazing start to your week!
Fit Ingredients
- 1/2 c (56g) coconut flour
- 1/4 c (30g) Linwood Cocoa Strawberries & Blueberries Flax
- 1 tbs baking powder
- 1 c + 2tbs (276g) liquid egg whites
- 1 c (226g) banana, mashed
- 1 tsp liquid stevia

- parchment paper

Directions
1. Pre heat your oven to 350 degrees.
2. Mix together your dry ingredients: coconut flour, flax and baking powder.
3. Mix your egg whites, mashed banana and stevia into your dry ingredients.
4. Line your baking pan with parchment paper.
5. Pour your batter into the baking pan.
6. Bake for ~ 50 minutes or until a toothpick comes out clean.
7. Remove from the pan and allow to cook on a rack before slicing.
This bread had the perfect hint of cocoa mixed with the flavors of fresh berries and bananas! The bananas kept the bread extremely soft and moist too! It was a great sweet addition to my breakfast!
*I actually found that I liked it better after storing it in the refrigerator for a day! I think the flavors were enhanced a lot more!
