Cinnamon Raisin Sweet Potato Cookies

Happy Monday! I hope you had a great weekend!! Mine was very busy as usual! I wanted to visit my sister, but with lots to catch up on from the week, plus an exam I didn’t get the chance! But you can be sure next weekend I will be seeing her! Can we also discuss how the weather forecast here in RI says snow on Tuesday!! WHAT!? Already? I can not even believe it! We haven’t even hit Thanksgiving yet! It’s a good thing I dug out the winter gloves and scarves this weekend!
Today’s recipe came about from a very intense craving I had one day for sweet potatoes, raisins and cookies….yes, all at the same time! haha I can’t complain though because that craving turned into this delicious recipe! I hope you enjoy! Have a great Monday!
Fit Ingredients
- 1c (138g) mashed sweet potato
- 1/4 c (28g) coconut flour
- 1 scoop (35g) Cinnamon Swirl Protein Powder (I used this one)
- 3 tbs (24g) oat flour
- 1 tsp ground cinnamon
- Sweetener, optional
- 1 large egg
- 1/4 tsp vanilla extract
- 1/4 c (40g) raisins, chopped (no sugar added)

- Baking Sheet
- Parchment Paper
- Non stick spray

Directions
1. Pre heat your oven to 350 degrees.
2. Line your baking sheet with parchment paper and spray with non stick spray.
3. Combine all ingredients, except raisins in a bowl.
4. Fold in raisins.
5 Drop batter on parchment in about 1tbs size rounds.
6. Bake for about 8-10 minutes.
7. Allow to cool before eating.
These cookies are soft, chewy and loaded with delicious cinnamon flavor! The raisins gave them a delicious sweetness as did the sweet potato! These didn’t even make it out the door for anyone else to enjoy! ?
