Cinnamon Cacao Popcorn Loaf

Serves: 8

Yes, you read that correct! It says ‘popcorn loaf’! A bread made with popcorn and chocolate! Salty yet sweet at the same time…there is no better combination!! Well, at least not in my book anyway! PLUS it is has the added bonus of protein for all my gym rats out there!! ?

Don’t be scared, just try it! You will be surprised at what you will taste! :)

Fit Ingredients

  • 6.5-7 cups (about 34g) lite popcorn
  • 2 scoops (42g) Sun Warrior Vanilla Protein
  • 1 scoop (28g) cinnamon protein (I used this one)
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 1/2-3/4c granular sweetener (depending on what kind of chocolate you use)
  • 1/2 c coconut milk (or milk of choice)
  • 1/4c + 2tbs (92g) liquid egg whites
  • 1 tsp vanilla extract
  • 1/2c (113g) greek yogurt
  • 3/4oz (21g) cacao nibs (or chocolate chips of choice)*
  • 1/4-1/2 tsp, optional*

Directions

Pre heat your oven to 350 degrees. Spray your loaf pan very well with non stick spray (if you do not coat it good, it will stick to the pan). In a food processor (or plastic bag with rolling pin…good stress release), pulse your popcorn until desired consistency. I left some larger pieces of popcorn to give it some crunch, but feel free to pulse it as fine as you’d like!) In a bowl mix your ‘popcorn flour’, protein powders, cinnamon, sweetener and baking powder. Add your coconut milk, egg whites, vanilla and greek yogurt to the dry ingredients. Mix well. Fold in your cacao nibs (or chocolate chips). Pour the batter into your loaf pan and bake for ~28 minutes.

Remove the bread from the oven and allow it to cool slightly before slicing. The top will seem a bit tough, but once you slice it, you will find the inside soft and the top gives it a nice texture!

I ate 2 slices in the morning with a shake before my workout! It was the perfect amount of fuel before I began lifting! :)

*Cacao has a more bitter chocolate taste. If you’re looking for sweeter go with chocolate chips…remember, the darker the chocolate, the better for you! I happen to be addicted to cacao chips!

**Sodium can vary greatly depending on the amount in your popcorn and if you add it to your recipe. Use as much or as little as you’d like to create your desired ‘salty/sweet’ taste!
