Cinnamon Apple Peanut Scones

Happy Friday! I hope you have all had a great week! Sorry for my lack of posting this week, but I have been a very busy bee! :) Of course, I couldn’t let you head into the weekend without a treat though! I hope you have an amazing weekend! Enjoy! :)

Fit Ingredients

  • 1/4 c (28g ) almond flour
  • 1/4 c (30g) peanut flour
  • 1/3 c baking stevia
  • 1 1/2 tsp baking powder
  • 2 tsp (4g) coconut flour
  • 1 large egg
  • 2 tbs coconut milk (or milk of choice)
  • 1/4 c (28g) crushed cinnamon apple chips (I used these)
  • additional cinnamon, optional

  • parchment paper

Directions

1. Pre heat your oven to 400 degrees.

2. Line your baking pan with parchment paper.

3. In a bowl combine your dry ingredients: almond flour, stevia, baking powder and coconut flour.

4. In a second bowl whisk together your egg and milk.

5. Combine your wet and dry ingredients.

6. Mix until a dough forms. (It will be slightly sticky – if you need to dry it up a bit just add additional coconut flour —slowly)

7. Mix in your crushed apples.

8. Divide batter into 3 circles (or whatever shape you’d like).

9. Top with additional cinnamon, if desired.

10. Bake for ~ 8-10 minutes.

11. Serve covered in more PB ?

These scones transport me back to when I was a kid and apples and peanut butter were one of my favorite snacks! But the cinnamon, turns it into one of my favorite adult snacks! They turned out perfectly, with a firm outside and a soft inside! They just melted in my mouth!
