Cinnamon Apple Granola Bars

Happy Monday! I hope you had a great weekend! We had some amazing weather! It was so nice to get outside and enjoy some sunshine without it being 100 degrees and humid! I feel fall slowly approaching and I couldn’t be more excited! It is my favorite time of the year! The smell, comfy jeans and sweatshirts plus tons of fall baking! Get ready! :) Pumpkin is one of my favorite things…along with apples and cinnamon, the main flavors in this delicious bar recipe! :) I hope you enjoy! Have a great Monday!

Fit Ingredients

  • 3.75oz dates, soaked for 3-4 hours
  • 3/4 c (60g) oats
  • 1/4 c (28g) chopped almonds
  • 1/4 c (30g) cinnamon apple chips (I used these)
  • 2 tbs (13g) ground flax
  • 1/2 tsp (or more ;)) ground cinnamon
  • sweetener, optional

  • baking pan (I used an individual brownie pan, but you can use a regular pan and just slice them)
  • non stick spray
  • food processor

Directions

1. Pre heat your oven to 350 degrees.

2. Coat your baking pan with non stick spray.

3. Drain the soaking water from your dates

4. Puree your dates in the food processor.

5. Add in your remaining ingredients and process until just mixed. (Or you can put everything in a bowl and hand mix to keep bigger pieces of oats and nuts)

6. Even spread your mixture into your baking dish.

7. Bake for ~ 10 minutes.

7. Slice up and eat! :)

**These bars can also be made raw if you’d like. They hold together better for traveling if they are baked slightly, however, I did prefer the taste and texture of the raw ones better! It’s all up to you! :)

Cinnamon, apples, nuts, oats…..a perfect blend of delicious flavors that are perfect for eating on the go! Like all my other bars these were perfect for post workout or on my way to yoga! :)
