Chocolate PB Sandwich Cookies
Happy Wednesday! Today I am pulling a recipe out of the archives…..the November 2014 archives! I can’t even believe I have been holding the recipe from you for that long! I mean, peanut butter, chocolate and cookie?! It’s a complete win! I hope you enjoy these bit size treats! Have a great day!

- COOKIES
- 1 scoop (40g) Nuts N More Chocolate Whey Protein Powder
- 5 tbs (36g) peanut flour (can sub pb2)
- 1/8 tsp baking soda
- 1/8 tsp salt
- 2 tbs xylitol (or sweetener of choice)
- 2 tbs Nuts N More Chocolate PB
- 2 (-3) tbs water
- FILLING
- 1/4 cup PB2 (mixed with water to create peanut butter) OR
- 1/4 cup Nuts N More Peanut Butter
Instructions
- Preheat oven to 400 degrees
- Lin a baking sheet with parchment paper
- Mix together whey, peanut flour, baking soda, salt and sweetener
- Cut in your chocolate peanut butter until peanut butter is in tiny balls
- Add in 2-3 tbs of water, SLOWLY until a dough is formed
- Form dough into 20 balls and flatten to form a circle shape cookie
- Bake for ~10 minutes
- Allow cookies to cool
- Spread 1 tsp of PB2 or Nuts N More PB on 1 cookie and top with a second
- Repeat until all cookies are done
- Will yield 10 ‘sandwiches’
