Happy Wednesday! I hope you are having a great week! Today, I thought we would switch things up and enjoy a healthy, but sweet treat! Because who doesn’t  love a good cupcake? Especially when they are packed with protein! And the combination of Chocolate and Coconut….need I say more? :)

  1. **Cupcakes**
  2. 1 c KoKoNut Stack’d Pancake Mix
  3. 1/3 cup xylitol (or dry sweetener of choice)
  4. 1 tsp baking powder
  5. 2 tsp coconut flour
  6. pinch salt
  7. 1/2 cup coconut milk (or milk of choice)
  8. 1 large egg white
  9. 1 tsp coconut extract, optional
  10. **Frosting**
  11. 1/2 cup Vanilla Bean Elli Quark
  12. 2 tbs Nuts N More High Protein Chocolate Almond Butter
  13. 1/4 cup Nuts N More Chocolate Almond Infused Whey Protein Powder
  14. Sweetener, if desired
  15. **Topping**
  16. 2 tbs reduced fat shredded coconut

Instructions

  1. Pre heat oven to 350 degrees
  2. Line a muffin tin with cupcake wraps and spray with non stick spray (or just spray muffin tin with spray)
  3. Mix together all cupcake ingredients
  4. Evenly divide batter among 6 cupcake tins
  5. Bake for ~18 minutes or until toothpick comes out clean
  6. While cupcakes are baking, combine all frosting ingredients in a bowl and mix with electric mixer
  7. Put frosting in refrigerator while cupcakes cool
  8. Once cupcakes are cooled, frost as desired
  9. Sprinkle with shredded coconut
  10. Store in a sealed container for up to 3 days
