Chocolate Coconut Pancakes

Happy Friday! I hope you had a great week! It has been a very long work week for me with travel to Boston yesterday and other fun stuff going on at work this week. I am sooo thankful that it is Friday! Finding even a small amount of time this weekend to relax is an absolute must! But before we dive into our weekend, let me leave you with this delicious recipe that I have hand on hand for sometime! This one has been hanging out in the archives for awhile. I shared it on IG about a month back and then forgot to post it! :( I apologize to those who have been asking me for it!

(Sorry for this hideous picture but I wanted you to see how fluffy they were!)

Fit Ingredients

  • 1/4 c(28g) almond flour
  • 1 tsp (4g) raw cacao powder (or cocoa powder)
  • 1 tsp baking powder
  • 1 tbs (7g) coconut flour
  • 1 tsp coconut oil
  • 1 large egg
  • 2-3 tbs milk (depending on your batter)
  • sweetener, to taste (I used 2-3 drops dark chocolate stevia)
  • 1/2 c (4oz) fat free ricotta
  • Coconut stevia, to taste (or coconut extra and sweetener)

  • Non stick pan
  • non stick spray

*************************************************************************

Directions

1. Mix together your ricotta and coconut stevia and put in the fridge until ready to use.

2. Mix together your dry ingredients: almond flour, cacao powder, baking powder and coconut flour.

3. Mix together your wet ingredients: coconut oil, egg and 2 tbs milk.

4. Combine your wet and dry ingredients (add in additional tbs of milk, if needed).

5. Coat pan with non stick spray and set over medium heat.

6. Drop batter into the pan in 1 tbs serving sizes.

7. Cook 3-4 minutes of until bubbles begin to form.

8. Flip and cook an additional 2-3 minutes,

9. Repeat until all batter is gone.

10. Take out your ricotta and layer between pancakes, alternating until none remains.

11. EAT :)

Chocolate and coconut are one of my favorite flavor combinations and these were AMAZING!!! Light, fluffy and sooo chocolately! They made the perfect dinner….which I paired with some turkey sausages and oven roasted veggies, of course!;)
