Chewy Peanut Butter Chip Bars
Happy Sunday! I hope you are having a great weekend! Today I have a delicious treat to share with you, but first, did you know that April is Soy Foods month?
The Soyfoods Association of North America (SANA) provides information about the health benefits and nutritional advantages of soy. SANA offers fun recipes and convenient ways to incorporate soy into meals for everyone – from athletes to families. SANA is dedicated to spreading the word about soy, especially during National Soyfoods Month in April!
Soy products have quite a few health benefits including:
- Heart health. A good source of plant protein, soy is one of only a few food components that reduces blood cholesterol.
- Weight management. Soy can help people achieve lower body weight and may help to redistribute unhealthy fat deposits away from the body core.
- Wholesome nutrition. Eating more soyfoods in place of animal-based protein sources lowers saturated fat, cholesterol, and calories in the diet, while increasing important nutrients like dietary fiber, folate, iron, and other minerals.
On top of those amazing health benefits, they can also be made into delicious foods including SoyJoy Bars
and Honey Nuts
I was fortunate enough to receive both of these delicious products in the mail to sample! I have had the SoyJoy bars in the past and absolutely loved the flavor and texture of them! They are sweet, but not over kill and have a soft chewy texture. The Honey Nutz were new to me, but right away they sounded delicious! Honey and Nuts? YES PLEASE! I first tried them out on top of some cinnamon pumpkin, sliced banana and soy nutz. I loved them! They added a nice crunch to my snack plus a slight hint of sweetness AND 8g of protein!
After trying them, I knew they would work perfectly in a bar recipe I had been planning! They added a nice sweetness and crunch! Plus, honey works so perfectly with oats, peanut butter and chocolate, wouldn’t you agree? ?
Chewy Peanut Butter Chip Bars
Serves: 8
Fit Ingredients
- 1c (80g) oats
- 1/4 c (30g) peanut flour
- 2 tbs (14g) coconut flour
- 1/4c (28g) Honey Nutz
- 3 tbs (21g) cacao nibs (or chocolate chips)
- sweetener, optional (I used 2 tbs honey)
- 1/4c (62g) applesauce
- 1/3c + 1 tbs (92g) egg whites
- 1 1/2 tsp vanilla extract
Directions
1. Pre heat your oven to 350 degrees.
2. Spray a baking dish with non stick spray.
3. Mix all of your ingredients together.
4. Spread evenly into a baking dish.
5. Bake for ~22 minutes.
6. Slice into 8 bars.
Individually wrap for a “Quaker Chewy” grab and go bar!
These bars turned out exactly like the Quaker Chewy bars I ate as a kid! Peanut Butter, Chocolate, Oats and Honey and one? DELICIOUS! They travel perfectly too! Keep them in a ziploc bag or sealed container in the refrigerator to maintain freshness!
