Carrot Cake Donuts

Happy Friday! I hope you have had a great week! I know many of you are off today for the holiday. If you are, I hope you are doing something fun! Today I am sharing with you a healthy version of one of my favorite desserts, carrot cake! With Sunday being Easter (and bunnies loving carrots ? ) I thought it would be a perfect time to share this! Instead of making it into a traditional cake or cupcake, I thought that making it into a donut would be fun and allow you to enjoy one of these while drinking your tea (or coffee) on Sunday morning! What a perfect way to start off Easter! I hope you enjoy!
Fit Ingredients
- 1/4c + 2 tbs (42g) almond flour
- 2 tbs (14g) coconut flour
- 2 tsp (10g) psyllium husk (or flax/mila)
- 1/4c baking stevia (or desired dry sweetener, to taste)
- 1/2 tsp baking powder
- 2 tsp cinnamon
- 3/4 tsp ginger
- 1/2 tsp cardamom
- 1 large egg
- 2 large egg whites
- 1/4c coconut milk (or milk of choice)
- 1.5 tsp pure vanilla extract
- 1/2 tsp butter extract, optional
- 1/2 c (65g) shredded carrots
Frosting
- 3 tbs cream cheese (I used Green Mountain Farms Cream Cheese & Greek Yogurt Blend)
- 1 tbs FF plain Chobani
- Vanilla stevia, optional

- Donut pan
- non stick spray/oil of choice

Directions
1. Pre heat your oven to 350 degrees.
2. Spray 4 donut molds with non stick spray.
3. In a bowl whisk together your dry ingredients: almond flour, coconut flour, psyllium, sweetener, baking powder and spices.
4. In a second bowl whisk together your wet ingredients: egg, egg white, milk, vanilla, butter extract.
5. Mix your dry ingredients into your wet ingredients.
6. Fold in your shredded carrots.
7. Divide the batter evenly among 4 donut molds.
8. Bake for ~ 25 minutes or until they spring back at the touch.
9. Allow donuts to cool.
10. While donuts are cooling mix together your frosting ingredients.
11. Divide the frosting evenly among the 4 donuts, spreading over the tops.
12. Serve along side some tea!
13. These will stay fresh in a sealed container in the refrigerator for up to 3 days.
Carrot cake turned into a healthy donut?? Enough said! ‘Hop’ to the kitchen and make some now! ?
P.S — I think this post clearly shows that I did not inherit my mothers frosting and decorating talents! ?
