What I Ate Wednesday #21

Happy Wednesday! I am so happy to be back in the blogging world with you! I want to apologize for being M.I.A the last week, but for those of you who don’t know, I was at my mom’s house in MA. I escaped the hurricane last Monday and did not return to New Jersey until Monday night. Although there was no damage to my house and I did have power, the streets were a mess and I am sure you have seen the chaos with the gas situation! Instead of coming back to New Jersey and being stranded in my house, I stayed and hung out with my mom! It was quite a relaxing week! I slept in, had long leisurely workouts, hit up every health food store known to man (Whole Foods, Trader Joe’s, Living Earth, the regular grocery store 10-20x’s ;) ), crocheted and definitely watched way too much tv! I will say that by Friday I was beginning to crawl out of my skin though! I missed my house and was dying to bake! However, without all my ingredients in MA or cooking tools or my camera, it was a loss. I felt like I had abandoned you! I received many emails asking if I was O.K. and when I would be back to posting recipes! Thank you so much for your concern! My family and I are all safe and sound and are without any damage!

I also want to apologize to all my usual blog friends whose sites I follow! I’m sorry for not reading or commenting on your blogs this past week! I was having issues with my internet for some reason! I promise to catch up on all that I have missed! I’m sure there is some exciting updates awaiting me! :)

Well, as per our usual Wednesday, we get to drool over food! I have been a little out of the loop with my pictures after last week, so I forgot to take a few, but I think I got most of them in! :)

Meal #1 What I Ate Wednesday #21Almond flour and flax pancakes with cranberries, flaked coconut and greek yogurt! So delicious!!

What I Ate Wednesday #21Yes, this is a recycled photo since I forgot to take one! I had my preworkout (Jack3d) and then post workout was a shake with coconut milk, strawberry whey protein, a banana, glutamine and BCAA’s plus 2 rice cakes with raspberry jelly!

About an hour or so after my shake/rice cakes I had 2 slices of paleo bread with avocado, chicken breast, fresh cranberries (that I turned into a jelly) and some of those delicious carrots, steamed!

What I Ate Wednesday #21Next up, some kelp noodles with broccoli, crushed tomato sauce, ground beef and goat cheese meatballs! Um, TO-DIE-FOR!! I am addicted to these little meatballs lately!

What I Ate Wednesday #21Some ‘Flackers’ with greek yogurt! Below is the picture of the box! These things are sooooo good and totally clean! I found that during my shopping adventures at Whole Foods this week!

What I Ate Wednesday #21You didn’t think I went a whole day without squash did you? Cajun Salmon, brussels sprouts and acorn squash with cinnamon! I think I could eat this for every meal!

What I Ate Wednesday #21 What I Ate Wednesday #21And before bed I had a Siggi’s yogurt with cashews and one of these amazing Almond Flour Cinnamon Coffee Cake Muffins that will be posted tomorrow!! (I had to remake them again since the ones I made prior to the storm I couldn’t photograph…such a pitty to have to eat them again ;) )
