Spicy Salmon, Broccoli & SunDried Tomato Pasta Salad
Served hot or cold, this quick and easy dish is the perfect answer to dinner on a busy night! And if you manage to have any leftover, it works great for lunch the next day too!

- 1lb pasta*
- 1lb coho salmon, cooked
- 2 cup broccoli florets
- ½ cup sundried tomatoes, chopped
- ¼ cup ghee
- Spicy seasoning, to taste
Instructions
- Cook pasta according to directions
- While pasta is cooking, flake salmon
- Add broccoli to pasta water for last 4 minutes
- Drain pasta and broccoli
- Melt ghee
- Toss together pasta, broccoli, sun dried tomato, salmon and ghee
- Add seasoning and toss
- Serve hot or cold
