Pina Colada Cookies

Happy Sunday! I hope you are having a great weekend! For those of you who were hit by the snowstorm, I hope you and your family are safe and warm! My area of New Jersey ended up with 12 inches of snow, but my poor mom, who is in MA, had over 26 inches!! I hope that was our one (and only) snow storm of the winter! Fingers crossed! :)

But, while you are stuck in the house, you might as well bake some delicious cookies and send your taste buds to a tropical island full of coconut and pineapple! I hope you enjoy this recipe! Have a great rest of your weekend! :)

Fit Ingredients

  • 1/3c + 1tbs (42g) coconut flour
  • 1 tbs (15g) psyllium husk (or flax or mila)
  • 1/3c baking stevia*
  • 2 large eggs
  • 1/3c coconut cream
  • 1 tsp pure vanilla extract
  • 1/4c (56g) applesauce*
  • 3/4c (140g) diced pineapple
  • 1 tsp reduced fat shredded coconut

**For paleo, remove the stevia and applesauce and sub in 2 tbs raw honey

  • parchment paper

Directions

1. Pre heat your oven to 375 degrees.

2. Line your baking sheet with parchment paper.

3. In a bowl, whisk together your coconut flour, psyllium husk and stevia.

4. In a second bowl whisk together your eggs, coconut cream, applesauce and vanilla.

5. Combine your wet and dry ingredients. Mix well.

6. Fold in your diced pineapple.

7. Divide your batter into 6 cookies.

8. Form into desired size/shape.

9. Sprinkle with shredded coconut.

10. Bake for 12-14 minutes.

11. Allow to cool and set in the refrigerator over night.

12. EAT! :)

These cookies are soooo incredibly soft that they almost melt in your mouth! The softness reminds me of those delicious Loft House Cookies that my mom used to buy me when I was a kid! Plus these have my all time favorite flavor…coconut and the sweetness of pineapple! All I need is an umbrella drink (and maybe some warm weather) and I will be in tropical heaven! ?
