Happy Monday! I hope you had a great weekend! Did you watch the Super Bowl? I had it on as background noise while I was working. And of course, I didn’t make it until the end! ? After 10pm and the only thing I see is the back of my eyelids! haha

Today’s recipe is one that has been hanging out in the archives since October!!! I know, I know! Just goes to show how far back some recipes are made before they are posted! But I figured it was a great time to bring them out! Who doesn’t love chocolate and peanut butter?! I hope you enjoy! Have a great Monday! :)

Fit Ingredients

  • 1/2 c gluten free flour (or flour of choice — not coconut)
  • 1/4 c (30g) peanut flour (could sub PB2)
  • 1/2 c baking stevia (adjust to desired sweetness)
  • 1 tsp baking powder
  • 2 large eggs
  • 1c (227g) greek yogurt
  • 1/4 c (64g) peanut butter
  • 2 tbs milk
  • 1 tsp pure vanilla extract
  • 2 tbs (28g) chocolate chips

  • 5×7 in baking pan
  • non stick spray

****************************************************************

Directions

1. Pre heat your oven to 350 degrees.

2. Coat your baking pan with non stick spray.

3. Combine all of your ingredients, except the chocolate chips, in a bowl.

4. Spread batter evenly in baking pan.

5. Sprinkle chocolate chips on top.

6. Bake for ~ 25 minutes or until almost set.

7. Remove from the oven and allow to cool.

These smelled soooo good, I couldn’t even wait to cut into them! The bars were sooo packed with peanut butter flavor, the chocolate chips were melty and warm! Yum! The bars are soft, yet still hold shape! These didn’t make it very far from my kitchen….I shared a few and the rest were mine! ?
