Paleo Strawberry Shortcake

Happy Monday! I hope you had a great weekend! I thought we would kick off our Monday with a sweet treat that will throw us into the summer mindset! I know I am in need of some summer ASAP! About a month ago I had a craving for a sweet strawberry desert, so I decided to make this little treat for myself. Well, it turned out beyond amazing and definitely kicked my craving! I think more than a sweets craving, it was a strawberry craving because all I have wanted to eat for the last month is fresh berries and salads (except of course my brussels and kabocha ;)) To me that means my body is craving the summer…..how many more days until then?! ? I hope you enjoy this recipe!
Fit Ingredients
For the shortcakes
- 3 tbs (21g) almond flour
- 1 tbs (7g) coconut flour
- 1 tsp (5g) psyllium husk (can sub flax, but this gives it a more true flavor)
- 1/2 tsp baking powder
- 1 tbs dry sweetener of choice (coconut sugar for paleo)*
- 2 large egg whites
- 1 tbs coconut milk (or milk of choice)
- 1/2 tsp vanilla extract
- 1/4 tsp butter extract, optional (can add in 1 tsp ghee for paleo)
- 3/4c (100g) sliced strawberries (or as many as you want! ;))
- Toppings: coconut cream, greek yogurt, tru whip, optional
*Add more or less sweetener depending on your desired sweetness level.

- 2 – 2 in ramekins (could probably use large muffin tin)
- non stick spray or coconut oil to grease ramekins

Directions
1. Pre heat your oven to 350 degrees.
2. Spray or coat the inside of your ramekin with non stick spray or coconut oil.
3. In a bowl whisk together dry ingredients: almond flour, coconut flour, psyllium husk, baking powder and sweetener.
4. In a second bowl whisk together egg whites, milk, vanilla and butter extract/ghee.
5. Combine your wet and dry ingredients.
6. Mix well.
7. Divide the batter evenly between two ramekins.
8. Bake for ~ 30 minutes
9. Allow to cool slightly before removing from the ramekins
10. Slice in half and top with sliced strawberries and optional toppings!
11. Enjoy!
Ok, I will be honest, I know I said this recipe serves 2…but it may or may not have only served one in my case! ? It was just too yummy to let it sit on the counter and stare at me for an entire day! It happens! ?
