P.B. Cookie Bars

Happy Friday! I hope you’ve had a great week! I know many of you have a long weekend beginning today! I hope you have something fun planned….or at least very relaxing! I actually decided to escape for the weekend and drove to Cape Cod yesterday! Even though the weather isn’t supposed to be the greatest, it will be nice to visit with my grandmother and relax for a bit! She already has a list of restaurants she wants to go to and I had only one request…That we go to Smuggler’s ice cream shop for my all time favorite ice cream; French Vanilla Raspberry Truffle. Yes, I plan on eating it every day several times with a huge dollop of real whipped cream! ;)

But before we head into the weekend, I have one delicious recipe to share with you! These bars are dairy free, oil free, gluten free, sugar free, vegan, no sodium, protein packed, wonders!!! They could technically even be “no bake” if you wanted to make them that way! I hope you enjoy them AND your long weekend! :)

Fit Ingredients

Bottom Layer

  • 3/4 c (90g) oat flour
  • 2 tbs (14g) coconut flour
  • 1/3 c baking stevia (adjust to desired sweetness)
  • 1 tsp baking powder
  • 2 small bananas, mashed (~160g)
  • 1/3 c + 2 tbs coconut milk (or milk of choice)
  • 1 1/2 tsp pure vanilla extract
  • 1 tsp butter extract, optional

Top Layer

  • 1/2 c (60g) peanut flour
  • 1/2 tsp pure vanilla extract
  • sweetener, optional
  • 6-8 tbs water (or milk)
  • 2 tbs (14g) cacao nibs (or chocolate chips)

  • 5×7 in baking pan
  • non stick spray

*************************************************************

Directions

1. Pre heat your oven to 350 degrees.

2. Spray your pan with non stick spray.

3. In a bowl whisk your dry ingredients: oat flour, coconut flour, stevia and baking powder.

4. In a second bowl, mix your mashed banana, coconut milk, vanilla and butter extract. Mix well.

5. Combine your wet and dry ingredients.

6. Spread your batter into the pan and bake for ~12-15 minutes or until just set.

7. While the base is cooling, mix together your peanut flour, vanilla extract, sweetener (if using) and enough water to form a spreadable paste (should have peanut butter like consistency).

8. When the base is cool, spread the peanut butter over the top.

9. Sprinkle the top with cacao nibs.

10. Cover and refrigerate for 6-8 hours.

11. Cut into 8 bars!

These bars taste just like a PB cookie!!! Hence the name! ;) They are melt in your mouth gooey goodness that is pure heaven!!! It is like eating a cookie right out of the oven!! You know with PB and chocolate in here these bars didn’t last more than 48 hours in my house! ;)
