Happy Friday! I am throwing a little loop at you and sharing a recipe on a different day this week! Things have been crazy so quick recipes, one-pan anything (like this One Pan Baked Cod & Veggies) have been my go-to meals! I mean, my life went from needing quick meals to super fast (yet still healthy) meals! And….to top things off, we haven’t talk fish in forever on here! But fear, not. This recipe is soooo easy! All you need is:
2 pieces Atlantic Cod
1 cup rainbow tomatoes
1 cup baby purple potatoes, quartered
2 tablespoons oil of choice
seasoning, as desired
Put it all together in a single pan, bake it up and serve! It doesn’t get any easier!

Ingredients
- 2 pieces Atlantic Cod
- 1 cup rainbow tomatoes
- 1 cup baby purple potatoes, quartered
- 2 tablespoons oil of choice
- seasoning, as desired
Instructions
- Preheat oven to 400 degrees F
- Toss potatoes with 1 tablespoon oil
- Roast in oven for 15 minutes
- Remove pan from the oven
- Add in tomatoes and cod
- Drizzle with remaining tablespoon of oil
- Season, as desired
- Bake for an additional 10-12 minutes or until fish is cooked.
