Yes, I am back with more one dish recipes! To be honest, I feel like they are the only things I have much time for right now! Quick, easy, healthy and 100% delicious! 2017 has been filled with so much craziness, but I don’t want to sacrifice my health or eating darn delicious meals due to lack of time. That would just be one terrible excuse! And we know nobody has time for excuses!
Honestly, what could be better than a One Dish Spaghetti Squash & Spicy BBQ Chicken Drumsticks recipe? I mean, one dish (easy), spaghetti squash (yum!), chicken legs (even more yum!), sweet and spicy bbq sauce (triple yum!) I can almost taste that BBQ sauce right now! And made with only four ingredients!!
- 1 medium spaghetti squash, baked and removed from skin (mine was about 22oz)
- 1 1/2 lb chicken drumsticks
- 1/4-1/3 cup favorite bbq sauce
- 1/2 – 1 tsp. habanero & carrot sauce
Does not get any better!
I know a few of you are probably wondering why I chose to use chicken legs instead of a leaner piece of chicken like chicken breast. To be honest, I used to be totally afraid of anything other than fat-free chicken! But last year I was seeing a lot of chicken thighs and decided I would give them a try. HOLY cow!! If you have never eaten a chicken thigh I suggest you do it asap! Or even give this One Dish Spaghetti Squash & Spicy BBQ Chicken Drumsticks recipe a try with chicken thighs instead! They are the most flavorful piece of chicken ever! Then I tackled chicken wings. Insanely delicious! So, it only made sense that I give chicken legs a try!
The chicken in this One Dish Spaghetti Squash & Spicy BBQ Chicken Drumsticks recipe turned out beyond tender, juicy and delicious! But, if you are following a lower fat diet or are still afraid to try anything other than chicken breast you can easily swap that for the chicken legs! Just be mindful of your cooking time.
