One bowl dark chocolate pomegranate bread that’s easy to make, super moist and hearty, and perfectly sweet! Makes for a great breakfast, snack or dessert! Gluten free and grain free. 

Tis’ the season for all things sweet and delicious! Holiday cookies, cakes, pies, you name it. We will all be enjoying them! Myself included! But sometimes, just sometimes (ok, maybe more than sometimes) I want something that satisfies my sweet craving and is healthy! Because that  is a double win! Like recipes that taste like dessert but are meant for breakfast? I am all about those! Mmmmm…..

Luckily, this recipe for One Bowl Dark Chocolate Pomegranate Bread is super delicious, super easy and definitely nutritious! Why is it so nutritious you may ask? Well, let’s take a look (my inner nutrition geeks wants to share too!) at the ingredients!

  1. Almond Flour: it is gluten free, low in carbohydrates and loaded with fiber and protein!
  2. Ground Flax: again, loaded with fiber plus serves up a healthy dose of omega-3 fatty acids which are the ‘good’ fats known to have a positive effect on heart health!
  3. Egg Whites: giving us a healthy dose of the world’s purest protein (a macronutrient that many Americans do not get enough of!)
  4. Coconut Oil: is full of good saturated fats that help increase healthy cholesterol (HDL) and promote heart health
  5. Pomegranate Seeds: are proven to boost immunity (which we all need a bit of during the cold months!)
  6. Dark Chocolate: I don’t think we really need a reason to eat dark chocolate, but in case you do, it is one of the best antioxidants on the planet!
  7. Coconut Vinegar: has more health benefits than ACV! I had no idea and we all know I am a huge fan of ACV! But, Coconut Vinegar also contains tons of rich minerals and amino acids which are so important in building and maintaining lean muscle! What?! Insane!

So what happens when you toss all of these amazing, hearty and delicious foods into one bowl? You end up with a healthy and satisfying bread that can be enjoyed for breakfast, snack or dessert!

Ingredients

Instructions

  1. Preheat oven to 350 degrees F
  2. Line a 9×5 in loaf pan with parchment paper
  3. Add dry ingredients into a bowl and whisk together
  4. Add in remaining ingredients except pomegranate seeds and chocolate chips
  5. Mix until combined (do not over mix)
  6. Gently stir in pomegranate seeds and chocolate chips, reserving 1 tbs of each for the top.
  7. Top with remaining 1 tbs each pomegranate seeds and chocolate chips
  8. Bake for ~ 35 minutes or until golden on top
  9. Allow to fully cool before slicing.
