Lemon Strawberry Pound Cake

Happy Friday! We have finally reached the end of the week! I am so excited for the weekend and some nice weather! A few weeks ago when I did the Lock Laces giveaway I had asked you to leave a comment about one of your favorite spring foods….and strawberries were a huge win! Since I too love strawberries, I figured why not start with the spring and summer recipes now! The warm weather this weekend makes for the perfect time to share this delicious cake! Loaded with strawberry and lemon flavor, you will definitely be shooting straight into the summer! Enjoy the recipe and have a great weekend! :)

Fit Ingredients

  • 1c (112g) coconut flour
  • 3 large eggs
  • 1/2 c + 1 tbs (138g) liquid egg whites (~4 large egg whites)
  • 1c coconut milk (or milk of choice)
  • 1c (140g) fresh strawberries, pureed
  • 1 tsp vanilla extract
  • 1 tbs fresh lemon juice
  • zest of 1 lemon
  • 1/2 tsp apple cider vinegar
  • sweetener, optional (I did not use any since my strawberries were sweet)

  • large loaf pan
  • parchment paper

Directions

1. Pre heat your oven to 350 degrees.

2. Line you loaf pan with parchment paper. (This makes the cake very easy to remove from the pan)

3. In a bowl whisk together your eggs, egg whites, milk, vanilla, lemon juice, lemon zest, apple cider vinegar and sweetener (if using).

4. Add your coconut flour to your wet ingredients.

5. Fold in your pureed strawberries.

6. Pour your batter into your loaf pan and bake for ~ 55 minutes or until set in the middle.

7. Allow to cool before removing from the pan.

Loaded with fresh strawberry flavor, yet moist and dense just like a full fat pound cake….it doesn’t get any better than that! Top it with additional fresh strawberries and coconut cream or greek yogurt! This is the perfect spring recipe!
