Happy Monday! I hope you had a great weekend! Mine was absolutely fabulous! I got to spend a nice long weekend with both my mom and sister! We haven’t had a long weekend together in over 8 years!! That is the downside of us both living all over the country! I was sad to see the weekend end! But on a positive note……
Today is the 22nd of the month which means it is time for another Recipe Redux Challenge!! //
For those of you who aren’t familiar with Recipe Redux (which by now I know mot of you are! :)) it is the first and only recipe challenge founded by registered dietitians. The Recipe ReDux is focused on taking delicious dishes, keeping them delicious, but making them better for you. It was founded by 3 amazing dietitians with a belief that healthier eating should always taste delicious. And let me tell you, I totally agree! The amazing bloggers who participate in this have come up with so many delicious, yet healthy recipes! If you haven’t been to the Recipe ReDux site yet, definitely pop over and check it out! Plus you can check out the other recipes from this month below! This months challenge was to create a recipe by the method of dehydration! I will be honest, I was really quick frazzled at first because I have never dehydrated anything…ever! I wasn’t sure what I was going to make! I also don’t own a dehydrator, so I knew I was going to have to use my oven. I was sitting on my couch one night eating some Pumpkin Cranberry Chips by Way Better Snacks (yes, I DO eat chips!) and thought to myself, “I wonder If I could recreate these?” I looked at the ingredient list, which seemed pretty simple and decided I was going to give it a try! I didn’t have a few of the ingredients on hand (sprouted quinoa or corn) so I used what I had and went to town! The experiment went oh so right!!! These came out just as crisp and delicious (with VERY similar nutrition facts I might add), but are completely grain free — and much cheaper!! Plus you can customize them to your own taste preferences! I hope you are able to give these a try! Have a great Monday!!
Homemade Pumpkin Cranberry Chips2014-09-15 09:37:28 Serves 3 A sweet and salty, homemade chip that is loaded with the flavors of fall, but without all the guilt! - 3/4 c (183g) pure pumpkin
- 1/4 c (26g) ground flax
- 1/3 c (40g) chopped dried cranberries (add more or less as desired)
- 2 tbs (28g) coconut oil, melted
- 1 c water
- Salt, as desired
Instructions
- Pre heat oven to 200 degrees
- Line baking sheet with parchment paper
- Mix all ingredients in a bowl (it should be liquid)
- Even spread mixture onto parchment paper using a spatula (or knife) into a thin layer
- Dehydrate in oven for 8-10 hours or until crisp
- Store in a sealed container for up to 1 week
