Fava Bean & Goat Cheese Dip
Serves: 12 (makes about 1 1/2 c)
This dip/spread is creamy and full of amazing flavor! Use it as a dip for veggies or as a spread on your favorite sandwich! It takes five minutes and is extremely healthy!
Fit Ingredients:
- 1 packaged (or 225g cooked) Melissa’s Pre-Cooked Shelled Fava Beans
- 1.5 oz fresh goat cheese
- 1 tbs fresh lemon juice
- Salt & Pepper, to taste
Directions:
Rinse your fava beans, if you are using pre-packaged ones like I did. Put the fava beans, lemon juice and pepper in your food processor and start to puree. You will have to stop and scrape down the sides a few times. Once the beans are mostly pureed (I left a few larger chunks for texture) add your goat cheese and give it a final quick mix to get the cheese incorporated into the beans. If the mixture is too thick for your liking feel free to add a bit of water or olive oil to thin it out. Scrape the dip out of the food processor and give it a final mix with a spoon. That’s it! Super Simple!
