Blackberry Clafoutis

Serves: 4 (large pieces)

I have turned this delicious french dessert into a clean FIT(ness) recipe that you can enjoy any time of day! I used blackberries since they are in season and are so sweet and juicy, but feel free to use whatever fruit you’d like!

Fit Ingredients

  • 6 oz skim milk (or milk of choice)
  • 1/2 tsp almond extract
  • 1 cup fresh blackberries
  • 1 1/2 tbs ground flax
  • 1/4 c splenda (or sweetener of choice), divided into 3 tbs + 1 tbs
  • 1/3c liquid egg beaters
  • 2 egg whites
  • 2 scoops whey protein powder (I used this one)

Non stick spray

Directions

Pre heat your oven to 425 degrees.

In a bowl mix your egg beaters, egg whites, almond extract and milk. In a separate bowl mix your flax, 3 tbs splenda and protein powder. Mix your dry ingredients into your wet ingredients. Spray your skillet with non stick spray and set over medium heat on the stove top. Add your blackberries and remaining 1 tbs of splenda to the skillet. Let the blackberries begin to warm up and start to become juicy. About 1-2 minutes. Pour your batter over the blackberries and allow it to cook for 1 minute. Transfer your skillet to the oven and cook 16-20 minutes or until set. Remove from the oven and allow to cool for 5 minutes. Serve warm or cold.

These are really big pieces! Feel free to divide them in half! The calories will be amazingly low if you do! :)
